Make ahead Oatmeal
1 cup of dry steel cut oats, toasted.
Add 2 cups of water and cover and simmer with a little cinnamon in the water. Once it’s creamy, leave covered and turn off heat and allow to cool.
Soba Noodle Salad with marinaded eggs
Mayak Marinaded Eggs:
Boil 250 grams soba noodles and rinse. Spiralize or chop 1 carrot. Add boiled mushrooms or other vegetable of choice (cucumber is great too). Add chopped cilantro and green onions. Toss everything with 2bsps of sesame oil and 3 tbsp marinade.
Spicy Greek Chicken Tray Bake
Preheat oven to 425 degrees.
To chicken pieces, 2 cups of potatoes and vegetables, add 2 tbsp hot sauce or peri peri sauce, juice and zest of 1 lemon, as well as lots of fresh herbs like rosemary, thyme and oregano. Bake for 40 min or until chicken is cooked through (less time for chicken breast).
