The Hearth That’s Bringing Mediterranean Cuisine To Chicago || Eat Seeker

The kitchen at Avec has been centered around its hearth oven for the last 15 years. This hearth is how the Chicago-based restaurant gives its Mediterranean-style cuisine its signature char. When Chef de Cuisine Perry Hendrix joined the team 5 years ago, he took full advantage of this wood-fired cooking method and brought in flavors of his own from Morocco and Portugal to expand the menu.
